Mustard Greens (Sarson Ka Saag): Recipe
Prep it up: Clean, wash and boil a bunch of roughly chopped sarson or mustard leaves along with spinach and bathua in about 2 cups water and some salt. You can optionally add chopped turnip for added sweetness. Once done, blend it into a grainy puree.
Tempering: In a pan, add desi ghee and crack some cumin seeds, finely chopped green chilies, coriander seeds powder, asafoetida powder, and ginger garlic paste till it all turns golden-brown.
Final stage: Mix the boiled leaves with the tempered paste. If they leave excess water, add 1-2 tbsp maize flour to thicken the same. Add red chilly powder and salt if required. Keep stirring for 10 minutes and add fresh cream thereafter.
Garnish with fresh coriander leaves and top it up with some more desi ghee. Enjoy with maize flour flatbread!
