I enjoy cream of zucchini soup every now and then. Zucchini is a wonderful Ayurvedic food. It can be cooked in tons of ways, and has a whole bunch of health benefits. Did you know that it’s packed with vitamin C? This yummy veggie regulates blood pressure and aids weight loss. It hydrates the body, boosts energy levels, and is also great for your bones! Cream of zucchini soup is great for Pitta since it is cooling and hydrating. It’s also good for Vata folks – in moderation. Go ahead and try this healing Ayurvedic zucchini soup recipe, and you’ll reap a whole bunch of healing benefits.
Cream Of Zucchini Soup Recipe
What you’ll need:
- 1 kg shredded zucchini
- 3 tbsp ghee
- 2 tbsp all-purpose flour
- ¾ cup dahi/yogurt
- Salt to taste
- 1 tsp ground black pepper
- 1 tsp ginger
- ½ tsp cinnamon
- 1 tsp cardamom powder
What to do:
- Add the zucchini and dahi/yogurt to a blender and make a smooth paste.
- In a pot, heat up the ghee.
- Add zucchini, salt, cinnamon, cardamom, and ginger.
- Bring it to a boil and then simmer for 20 minutes.
- Once well cooked, pour out and sprinkle black pepper powder.
Savour it with some ghee-roti!
